Bonus - Honey Oat Whole Wheat Bread
1 cup boiling water 202g ¼ cup warm water 49g
1 cup oats
82g 1 cup whole wheat flour 163g
¼ cup honey
74g 1 cup bread
flour 145g
1 tsp salt 4g 1½
tbsp vital wheat gluten 12g
1 pkt yeast
8g ½
tsp sugar
Place the oats in the bread machine pan, and pour the boiling water over; let sit for 10 minutes. Combine warm water, sugar, and yeast in a small cup to proof. Add proofed yeast to the oats, then add the honey, whole wheat flour, bread flour, and salt. Run on dough cycle. You can also mix all this in a large bowl and knead by hand, or in a stand mixer. At the end of the kneading, turn the dough into an oiled bowl and place in a warm spot to rise (oven with oven light on). Check after ~90 minutes. If dough has doubled, turn onto floured work surface and shape into a loaf. Place in greased loaf pan and return to warm place to rise again. Check after another 90 minutes. When dough has risen again, bake at 425° for 25 minutes or a thermometer reads 190° Remove to a wire rack to cool. Makes 1 loaf (709 grams). Calories per 28 grams: 120.
