11 Madison Park Granola - https://cooking.nytimes.com/recipes/1014304-eleven-madison-park-granola NOTE: Here are some of my tweaks to the recipe - I use whatever is on hand, and like to add things like flaxseed, wheat germ, chia, hemp hearts, and a variety of nuts. I stopped putting salt in altogether. One tablespoon is way too much, and sometimes the nuts I'm using are salted, so that's plenty. I will use molasses and white sugar instead of brown if needed. As I said in the podcast, I don't add any dried fruit since I'm using the granola with fresh fruit. And I mentioned mine is usually done in less time - I wonder if that's because of the pan I use - it's a very large heavy duty sheet pan - maybe it heats hotter and the granola is spread out more on it. I like to set a timer and stir every 10 or 15 minutes and mix in the edges which usually get darker first. I do line the pan with parchment - this makes it easier to pick up and funnel it into the jar once it's cool. I think that's it for changes - if I think of anything else I'll add it here!
